# Expert Tips:

01 -
  • It takes five minutes and makes you look like you spent an hour thinking about your guests.
  • Those Valentine's Day bottles of prosecco finally get their moment to shine instead of sitting in the back of your fridge.
  • You can serve it as a proper cocktail or strip away the alcohol and nobody will feel left out.
02 -
  • Don't muddle the raspberries too aggressively or you'll crush the seeds, which turn bitter and cloud your drink—firm pressure is enough.
  • If you're making this ahead, muddle the fruit and chill it separately, then combine everything with ice and bubbles just before serving so nothing goes flat.
03 -
  • Chill your glasses in the freezer for five minutes while you're muddling so your drink stays cold longer and tastes less diluted.
  • Buy frozen raspberries in bulk when they're on sale; they're just as flavorful and actually easier to muddle because they're softer.
