03 - Layer the spinach, roasted red peppers, feta cheese, red onion, and cucumber over the hummus.
04 - Sprinkle with freshly ground black pepper and dried oregano.
05 - Fold the sides of each tortilla inward, then roll up tightly from the bottom to enclose the filling completely.

# Expert Tips:

01 -
  • It comes together faster than ordering takeout and tastes like you actually tried.
  • Every bite feels bright and satisfying without weighing you down, which is rare for something this simple.
  • You can prep the ingredients once and have lunch ready for days, or throw it together on a whim with whatever you have.
02 -
  • If your tortilla tears when you roll it, it's either too cold or too dry, so warm it for a few seconds in a dry skillet or microwave first.
  • Don't overfill the wrap or it will burst when you bite into it, which I learned the hard way over my favorite shirt.
  • Drain the roasted red peppers completely and pat them dry with a paper towel, or the moisture will make everything soggy within minutes.
03 -
  • Warm your tortillas slightly before assembling so they're more flexible and less likely to crack when you roll them.
  • If you're making these for a party, use flavored tortillas like spinach or tomato basil to add visual interest without extra effort.
  • A light smear of Dijon mustard or a sprinkle of za'atar can elevate the flavor in unexpected ways.
