# How to Make It:

01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.

03 - In a large bowl, beat softened butter with granulated sugar using an electric mixer until the mixture is light and fluffy, approximately 2 to 3 minutes.
04 - Add the egg, fresh lemon juice, lemon zest, and vanilla extract to the butter mixture. Beat until fully combined.
05 - Gradually blend the dry ingredients into the wet mixture, mixing only until the dough comes together.
06 - Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them 2 inches apart. Gently flatten each with your palm or the bottom of a glass.
